Cucumber Mint Sangria Recipe
This Cucumber Mint Sangria Recipe is a fun, light cocktail that would work well for spring and summer parties. Plus, it is super easy to make. You will only need to pour the ingredients together and cut up some cucumbers!
This recipe is very versatile and will allow you to cater to your guests’ tastes. You can make it more or less sweet. It definitely feels refreshing and not overly sweet as written in this recipe. Sometimes fun cocktails can be too sweet!
This recipe includes cucumber vodka, so you really want to make sure you like cucumbers. It really helps to give it the fresh taste. You will feel like you are drinking spa water…only with alcohol.
I had to really search for the cucumber vodka, but found it at the liquor section of our grocery store. If you prefer to not have the cucumber taste be so pronounced, feel free to use any other flavor of vodka. I totally got too cucumber happy when making the sangria. Don’t put as many in there as I did!! Ha!
I would recommend putting all the ingredients together (minus the cucumbers and mint) and letting them chill together for at least a few hours before your party.
Please note that those cucumbers will soak up the alcohol so don’t add them until right before serving time or you won’t have enough to serve your guests! Also, the mint leaves might turn brown if added too early, so add the right before the event.

We tried this recipe with just a bottle of Chardonnay and it was too dry, so we added a Pinot Grigio. If you like dry, go with two bottles of any dry, white wine of your choice. If sweeter is more your style, you might want to use two bottles of your favorite sweet wine. Or, you can increase the amount of simple syrup (or sugar) if you like sweeter cocktails.
